When buying a middle of the range Digital SLR camera, what should I go for?

The Canon that you mentioned is an entry level model not a mid range model. That said it is a great choice. It has tons of available lenses and accessories and will serve you well.

Before you buy any camera I would go down to a good camera store and play around with a few. You need to find a camera that feels good in your hands and has the controls where they make sense to you.

Another camera to look at would be the Nikon D60.

If you want a mid level camera check out the Canon 40D or the Nikon D300.
